These great yards, the greatest and most charasteristic industry of Chicago, lie in the south side, on South Halstead Street, running from Thirty-nith to Forty-second Street. They were opened in 1865, and now cover 400 acres, 320 in the yards, the rest in tracks. The entire plant, costing about four millions, contains 20 miles of streets, 20 miles of watertroughs, 50 of feetroughs and 75 miles of water and drain-pipes. Twenty railroads bring and carry off the stock, each one communicating directly with the Yards. The Company owns all the 150 miles of tracks and does all the switching, takes charge of the stock, feeding and watering the cattle in the pens, and collecting the expenses from the commission-men. The yardage charges are moderate, but the feed is very expensive. The great checkerboard of pens, stretching before us, contains 3,300 stalls, accommodating over 75,000 cattle, 300,000 hogs, 50,000 sheep and 5,000 horses. The pens are arranged in divisions, as Division A. pen 87, which lies directly before us. Each pen has a watertrough and hayrack and a brick floor. Macadamized alleys reach every pen. The cattle-trains, made up of twelve to fifteen cars, each containing about 20 cattle, arrive usually from 4 to 8 A.M., and average about 10,000 cattle daily. Swift’s alone usually receive 125 car-loads. The yearly average of stock that comes in is three to four million cattle, seven to eight million hogs, and three to four million sheep ; valued at two hundred to two hundred and fifty million. Two-thirds of the stock is killed here and dressed in the paching-houses in the distance. The greatest of these establishments are Armour’s, Swift’s, Hammond’s and Nelson Morris & Co.’s, employing about 25,000 workers.
